Our Go-To Meal

Perhaps you have one, too.  A meal you can make quick, but it's still somewhat nutritious, and not that expensive.   I thought I'd share ours.  Everyone can always use a new Go-To meal.  

Simple.  

Here's what you need: 

2 pkgs. frozen tortellini
frozen bag chopped spinach
tub of Parmesan cheese or fresh block to grate; whatever you have on hand
tub of grape tomatoes, or tomato chopped
tub of pre-made pesto OR some good olive oil, garlic, basil, pine nuts. 
shredded cooked chicken; I usually cook a whole chicken, shred it and freeze it in bags.  So I have it on hand for meals like this.  

Here's what you do:
Set the bag of chicken out in the morning or at lunchtime even. Set the spinach out, too. 
Cook the tortellini. 
Chop the tomato. 
In a big pretty bowl, put the spinach on the bottom.  
Drain the tortellini when done, immediately dump it on top of the spinach in the bowl. 
Add the chicken and pesto of your choice.  Stir. 
Sprinkle on good handful of cheese, mix, and then toss on top the tomatoes. 



Easy.  Even pretty.  So, some nights we eat a full traditional food meal.  Other nights, a frozen pizza.  But on these nights, it's a little fresh....a little processed.

  1. Mine is a breakfast meal. A multi-grain waffle toasted with a fruit on top. Usually its a sliced banana, sometimes mango and papaya (frozen fruit), sometimes raspberries and blueberries. Whatever fruit you go with put it into a bowl, sprinkle honey over the top, and zap it in the microwave for 30 seconds. Once your waffles "pop" from the toaster, cover them with your fruit and then sprinkle the whole thing with crushed pecans. Its wonderful and super easy :)

  2. Do you remember Swiss Burgers in our household? Just thinking about past meals with all three kidders at home... Swissburgers was a go-to meal. I love your go-to meal. It is now one of my favorites you introduced to us!

  3. That looks very yummy and pretty! Our's is Tuna Casserole. I usually always have the ingredients on hand and it's quick and easy and my family loves it.

    Boil egg noodles. Add 1 big can of all white tuna, 2 cans of cream of mushroom soup, shredded cheddar, bread crumbs, and salt and pepper. Mix it up and top with more cheese and bread crumbs. Bake for about 20 minutes at 350 degrees.
